Mixed vegetables kofta :
Delicious and creamy restaurant style kofta curry made with mix vegetables. It is a rich gravy so best meant for special occasions or for an indulgent weekend lunch or dinner. And best suits for roti, naan, Paratha or any rice varieties like pulao, ghee rice, jeera rice etc.
There are many variations in preparing this kofta curry. you can make with mixed vegetables, or only use paneer and potatoes or you can you meat etc.
You can also make use of leftover vegetables curry. Some people use fresh vegetables and mince in a food processor and then make kofta balls. But I here saute all the chopped vegetables nicely and then add paneer and cooked potatoes to get nice texture and I add corn flour you can also add besan flour to get firmness. this mixed veg kofta balls is very soft and tasty.
Making a gravy also takes time you need to cook the curry base till the oil seperates and then add the balls. if else the balls may break. In restaurants they serve balls and add the gravy on top of it. you can also serve in the same ways. So you dont want to add the balls in the gravy and mix. You can garnish with chopped spring onions and fresh cream.
For making veg kofta balls
1 tsp oil
Spring onion bulbs
chopped carrots
chopped beans
chopped capsicum
Green peas
chopped cabbage
chopped red chilly
Spring onions
Grated paneer 100g
Boiled potatoes 2
Ginger garlic paste 1/2 tsp
Chilly powder 1 tsp
Coriander powder 1 tsp
Corn flour 2 tbsp
Cashews 10-12
Salt as required
Oil for frying
For making gravy
2 tsp oil
1/2 tsp cumin seeds, fennel seeds
Curry leaves
Paste of 2 onion
Paste of 3 tomatoes
1 tsp ginger garlic paste
1 tsp chilly powder, 1 tsp coriander powder
1/2 tsp garam masala powder
2 tbsp curd
Water and salt as required
1 tsp kasuri methi
Chopped spring onions and cream for garnishing
