Undhiyu is one of the most traditional recipe of Gujarat which is made up of many winter vegetables combined together with perfect crispy muthiyas, flavored by various spices to give an authentic taste. Try it out this winter.

Ingredients:
For muthiya:
1 cup gram flour
3/4th cup wheat flour
Salt to taste
1/2 tsp turmeric powder
1 tbsp coriander powder
1 tbsp red chilli powder
2 tsp sugar
3 tbsp oil
2 cup finely chopped coriander leaves
Water to knead the dough
Oil for frying
For the stuffing:
1 cup gram flour/ besan
1 tbsp coriander powder
1/2 tsp turmeric powder
1 tsp red chilli powder
Salt to taste
2 tsp lemon juice
3 tbsp oil
1 tsp ginger chilli paste
1/2 cup chopped coriander leaves
For undhiya:
4 tbsp oil
1 tsp carom seed
1 tsp turmeric powder
1 cup hyacinth beans
1 cup pigeon peas
Salt to taste
1 cup water
1 1/2 cup flat beans
3 carrot
3/4th cup cauliflower florets
6 potatoes
5 to 6 brinjal
2 diced sweet potatoes
5 to 6 tomatoes puree
1 tbsp coriander powder
1 tbsp chilli powder
