Khao soi, which translates as “cut rice,” is a dish introduced to Thailand via Yunnanese Muslims traders, who passed through parts of Myanmar, Laos and Thailand. Adapted into northern Thai cuisine, the dish of boiled egg noodles is topped with a coconut milk-based curry and succulent chunks of beef or chicken.
