Starting in the 1960s, and increasingly in the 1990s, plant breeders undertook efforts to produce hybrid wheat varieties with the goals of improving yield and disease resistance. Both worthwhile goals but the wheat hybridization have led to the rapidly growing prevalence of celiac disease today.
Hybridization has created 14 new strains of gluten. The problem with this new gluten is that is hard to digest and with wheat now containing so much of it, it is becoming a problem for many people. Modern hybridized wheat isn’t really fit for human consumption and is too hard on our digestive system.
The common wheat harvest protocol in the United States is to drench the wheat fields with Roundup (Glyphosate) several days before the combine harvesters work through the fields, as this practice allows for an earlier, easier and bigger harvest.
