Dairy-free Rice Pudding Full Recipe:
1 cup medium-grain white rice
1 ¾ cups water
3-4 cinnamon sticks
Salt as needed
3 cups unsweetened non-dairy milk (preferably soy or cashew)
13.5 ounce can full-fat, unsweetened canned coconut milk
⅔ cup sugar or sweetener of choice
1 ½ teaspoon vanilla extract
1 teaspoon cinnamon
½ cup raisins (optional)
Add water to a large saucepan, bring to a boil.
Add rice, cinnamon sticks and a pinch of salt to the water. Stir to combine.
Bring back up to a simmer, cover and cook rice for 20 minutes.
Once rice is cooked, add in non-dairy milk, canned coconut milk and sugar.
Cook uncovered, stirring occasionally until the mixture thickens.
Remove from heat and add raisins if desired.
