Prayers for all of you. Today's recipe of Masala Chargha is very special for those who have visited the food street of Karachi named Husainabad food street and there they have tasted the juicy Masala Chargha of silver spoon aka Ghausia.
The speciality of this Masala Chargha is
1- THEY DONT FRY CHARGHA BUT GRILL IT.
2- THEY SERVE MASALA WITH CHARGHA.

MASALA CHARGHA RECIPE
Whole Chicken 1 OR 1+¼ Kg
1ST STEP
1/4 cup Vinegar
3 cups of water
MARINATION
Salt 1 tsp
Red Chilli Powder 1 tbsp
Ginger Garlic Paste 1 tsp
Roasted & crushed Cumin seeds ½ tsp
Black pepper powder ½ tsp
Lemon Juice 2 tbsp
White Vinegar 2 tbsp
Garam Masala Powder ½ tsp
Yoghurt ½ cup
Orange food colour ¼ tsp
Kachri Powder / Raw papaya paste 1 tbsp
Oil 2 cups + 2 tbsp
Method:
1-Wash and give the whole chicken deep cuts and dip it in 1/4 cup white vinegar for 30 minutes.
2- Marinate the chicken with all spices for 2 hours.
3- Steam the chicken until it becomes tender.
GHOUSIA CHARGHA IS GRILLED NOT FRIED.
So, If you like fried chargha you can fry or eat as it is or you can grill it.

4- Fry the chicken from all sides for 2 minutes.
