Aloo Sem Ki Sabzi.
INGREDIENTS
Sem: 250 Gms
Onions: 2 med sized (sliced)
Brinjal: 250 Gms (4-5 med Sized sliced) - OPTIONAL
Potatoes: 2-3 medium sized (sliced)
Roasted Cumin-Dry Red Chilli Powder: 1 Tsp
Panch Phoran: 1 Tsp
Dry Red Chilli: 2
Turmeric Powder: 1 - 2 Tsp
Salt: As per taste
Oil: For Frying
PROCESS:
Cut the sems into halves by removing the edges, as shown in the video.
Wash them thoroughly and set them aside.
Similarly, slice the onions, brinjal, and potatoes, then keep them aside.
Heat some oil in a Kadhai and fry the brinjal with salt and turmeric powder on medium-high heat for 1-2 minutes.
Once done, remove the brinjal and set it aside.
In the same Kadhai, add a little more oil, then toss in dry red chilies and panch phoran. Sauté for a few seconds.
Add the sliced onions and sauté for another 30 seconds.
Now, add the sems and cook them on medium heat for about a minute.
After a minute, add the potatoes and fry them for another minute.
Season with salt and turmeric powder, then mix well.
Cover and cook on low heat for a minute.
After a minute, uncover, give it a stir, cover again, and cook for another minute.
Repeat this step 2-3 times.
After 3 minutes, remove the lid and fry them on medium heat for another minute. Then, add the fried brinjal to it.
Sauté everything together on medium heat for another minute.
Sprinkle some roasted cumin and dry red chilli powder on top and mix well.
Our Aloo Sem Ki Sabzi is now ready to serve!
Note: You can skip the step of frying the brinjal if you prefer not to include it.
