It can be said that the largest concentration of Afghan population in Iran can be found in the city of Mashhad and the neighborhood of Golshahr. In this area, one can feel like they have entered Afghanistan itself. During my visit, I went to an Afghan restaurant to try the most famous Afghan food, Qabuli, which is cooked by a skilled chef from Mazar-i-Sharif along with his sons. Over 100 kilograms of meat were used for each meal, indicating just how popular this dish is in the area. I even saw guests who had traveled from Europe to Mashhad just to come to Golshahr and eat Qabuli.
The final cooking of Qabuli pulao takes around 3 to 4 hours, but the preparation of the ingredients starts from the afternoon of the previous day. I had the pleasure of befriending one of the head chefs, Syed Hojjat Hosseini, who is also a media activist in Mashhad. During my time with him, I thoroughly enjoyed our conversations.
Overall, Golshahr in Mashhad is a must-visit destination for anyone who wants to experience authentic Afghan cuisine and culture in Iran.
