Additional information regarding the extraction of the espresso with Soft Pre-Infusion. This early and gentle introduction of water to the coffee bed - aiming at full saturation of the bed of coffee - and at the very least, full saturation of 50% of the bed of coffee - and mitigating early channels - through which water will always find the easiest way to pass through a medium.

Having the bed of coffee, now the puck wetted prior to full pressure extraction, it becomes more soluble under extraction - thus removing more soluble matter into the final cup. This is what I was looking to explain when speaking on improving the extraction - or upping the extraction with Pre-Infusion.
It is in my experience that good espresso puck preparation, using dialled into recipe coffee, with a well-managed pre-infusion in espresso preparation, followed by a slow and steady ramp to pressure, achieves a very rich, heavily bodied espresso. At the same time, reliably well balanced in acidity, with a great amount of sweetness - more so than any Espresso shot at straight 9bar pressure can even come close to achieving. It's like the Pre-infusion shot is closer to the concentrations of a Ristretto, at full extraction.
