This simple, but delicious dish is similar to ratatouille, but comes from Spain. It is super versatile and can be used as a main, a side dish, as a sauce, a filling for pies or empanadas, eaten either warm or cold and freezes well. So in the unlikely case you have leftovers, just put them in the freezer and reserve for later.
This one pot dish is originally from Castilla la Mancha (hence the name), but is now a favourite all over Spain. Make it yours, too!
Ingredients:
2 garlic cloves
1 onion
1 pepper of each colour
1 aubergine
1 zucchini
500g chopped tomatoes
herbs like thyme, bay leaves, oregano, rosemary, etc.
