Putu Ayu (Steamed Pandan Coconut Cake) is one of the most popular street foods in Indonesia. You also can find this in other countries in Southeast Asia with other names. Traditionally, we make this individually with Putu Ayu mold like what I show you in this video. This steamed pandan coconut cake has a soft and fluffy texture with tasty grated coconut on top which perfectly balances out the sweetness of this steamed pandan coconut cake. By using pandan juice, it gives a strong original pandan aroma to this cake.

Grated Coconut on top
===================
* 50 ml water
* 50 gr coconut fine desiccated
* ¼ tsp salt
Pandan Juice
============
* 25 gr pandan leaves
* 100 ml water
Steamed Pandan Coconut Cake
==========================
* 2 eggs
* 75 gr sugar
* 90 gr plain flour
* ½ tsp baking powder
* ¼ tsp pandan essence (green food colouring)
* 60 ml coconut milk
* 4 tbsp pandan juice
Other things you will need
* Cooking oil (for brushing the Putu Ayu mold)
* Putu Ayu mold (cetakan kue Putu Ayu)
Notes:
* You can use fresh grated coconut to substitute coconut fine desiccated and remove the water.
* If you want to skip making pandan juice, you can substitute with water or coconut milk with the same measurement and use 1/2 tsp of pandan essence.
* If you don't have a special Putu Ayu mold, you can use mini bundt cake pan or silicone mini cupcake mold.
* Steaming time may vary depending on your steamer you have.
