#Gallo Pinto is a typical Nicaraguan dish made out of rice and beans mixed together. It is not the same as Congrí Cubano or Arroz con Habichuelas Puertorriqueño. The dish is completely vegetarian. No meat products whatsoever, but it is usually served with some type of protein, chicken, eggs, beef, pork, or fish.
Usually, you make the beans from scratch, but in this recipe, I am using organic canned beans and I am cooking the rice in the rice cooker to make it easier for my viewers because I know that a lot of people don't have the time to cook beans from scratch, so this a healthy alternative. Recipe
2 cans small organic beans red or black.
1 cup of long-grain white rice for rice cooker.
3 Tbs diced onion
3 Tbs vegetable oil like olive oil, canola, or corn
Salt to taste
