Make the most of that turkey with this easy and delicious soup recipe.
1) Place your turkey carcass, after it’s been picked clean on Thanksgiving, in a large pot. Add veggie scraps and whatever herbs you have. I used onion, carrots, celery, garlic, bay leaves, and peppercorns. Cover with water. Bring to boil and simmer for several hours.
2) Strain broth through colander into another pot. Take time to pick through the scraps for meat! You’ll be surprised how much comes off, it’s worth it!
3) Bring broth back to boil and simmer to reduce, if you want. Add in whatever vegetables you want. I used carrots, peas, and corn. Add egg noodles (or whatever pasta you want.
4) Add picked meat in along with whatever leftover turkey you also have. I even added leftover gravy to use it up! Season as needed and enjoy!
