SAFFRON BUNS RECIPE
Ingredients:
• 300ml Whole Milk
• 0.5g Pack Saffron
• 75g Unsalted Butter
• 500g 3 1/2 to 4 cups (490g to 570g) all-purpose flour
• 50g white granulated sugar
• 7g sachet yeast
• 1 large egg beaten, plus extra for egg wash
Method:
• step 1: use a pestle and mortar to grind saffron and sugar into powder.
•
• step 2: put the milk in a small pan and gently heat until it’s steaming.
•
• step 3: pour the saffron and sugar powder into the steaming milk.
• step 4: add cubes of butter into the milk.
• step 5: swirl to melt the butter, then set aside until lukewarm.
• step 6: pour half of the butter milk mixture into a jug add yeast and set aside.
• step 7: in a large bowl, add flour, caster sugar and salt.
• step 8: pour in the milk mixture along with the egg into the stand mixer.
• step 9: mix together to form a sticky dough.
• step 10: knead until smooth and elastic for 10 mins.
• step 11: cover with cling film and set aside in a warm area to rise for 1hr until doubled in size.
• step 12: divide the lump of dough into 4 equal size.
• step 13: working with 1 piece of dough at a time, roll out into a 30cm-long strand.
• step 14: roll up one end into the middle, turn over and roll the other end into the middle, forming the dough into an s-shape.
• step 15: place the buns on a large parchment-lined baking tray.
• step 16: cover the buns for 30 mins until doubled in size.
• Step 17: while the buns prove, heat oven to 200c/180c.
• step 18: when ready to bake, brush the buns with beaten egg and press a currant into the centre of each spiral.
• step 19: put the trays in the oven and bake for around 15-20 mins.
