Christmas is around the corner so I thought of making this Bibikkan cake., Traditional Sri Lankan coconut cake, or bibikkan, is a classic sweet typically made for New Year’s celebrations. These vegan sweet goodies are loaded with cashews, dates, and spices and make the best addition to any of your parties.
Ingredients:
All-purpose flour-1 Cup + 1 1/2 Tbsp
Baking powder-1 Tsp
Salt-1/8 Tsp
Baking soda-1/2 Tsp
Cardamon-6
Cloves-4
Dates-170 Grams (soaked 1/2 Cup of plain tea) (let the dates soak for 45 mins)
Kithul treacle-1 Cup + 1/3 cup =1 Tbsp
Scrapped Coconut-3 Cups (measured in 250 ML cups)
Cashew Nuts-60 Grams
Add the soaked dates
Butter-3 1/2 Tbsp
Room temperature Eggs-3
Vanilla-1 1/2 Tsp
