Prime rib is my go to meal for Thanksgiving. On today's episode we're gonna be going to one of my favorite restaurants in the world, talk a bit of meat science, try our best to replicate the experience at home, and my mother is gonna go over the story of the First Thanksgiving. Enjoy!
Prime Rib roast:
-high quality beef rib roast(about 1 pound per person)
-Salt
-pepper
1. Trim excess fat from roast, heavily season with salt and pepper
2. Allow to sit at room temp for 2 hours
3. Roast in oven at 235F for 4-5 hours
4. When temperature is reading 10 degrees below target, remove roast and allow to rest for 30 minutes
5. Finish roast in the oven at 500F until the surface is crisp
Yorkshire pudding
4 eggs(small)
1 cup milk
1 cup flour
1/2 tsp salt
8 tbsp beef tallow
1. Combine ingredients until smooth and allow to rest for at least 30 minutes before use
2. Preheat popover pan(or muffin tin) with 1 tablespoon of fat in each well
3. When the fat is hot(about 10 minutes of heating) pour batter into each well until 90% full
4. Cook for 20-25 minutes or until the puddings have puffed and browned deeply
5. Enjoy immediately
Creamed corn
2tbsp flour
2 tbsp butter
1 clove garlic
2 Cups of milk
3 cups of Corn(about 6 cobs)
1. melt butter over medium heat, and whisk in flour, stir for 1 minute
2. add in optional garlic, and stir until fragrant
3. add milk, and whisk until smooth
4. stir until thickened, then add corn
5. simmer until corn is fully cooked
6. season to taste with salt
Au jus
3 stalks of celery
1/2 onion
2-3 smashed cloves garlic
1tbsp beef fat
4 cups beef broth
1 tbsp soy sauce
1 tsp black pepper
3 Sprigs of thyme
Optional dash of dark soy sauce for color
1. Sauté vegetables in the fat over high heat until softened and slightly browned
2. Pour in beef broth and soy sauce and boil on high until the sauce is 50% reduced
3. strain au jus, and salt to taste(should be slightly salty)
