What I used (serves approx 6-8):
1 quarter of a medium sized pumpkin
2 white potatoes
2 white onion
3 tomatoes
10 garlic cloves
1 red pepper
5 spring onions
2 carrots
Piece of ginger
Half a large courgette
1 tbsp coconut oil
1 tsp cayenne pepper
1 tsp chilli flakes
1 heaped tbsp curry powder
1 tsp pink salt
1 tbsp tomato puree
Few sprigs of thyme
1 tin coconut milk
230g green lentils (cooked)
230g kidney beans (cooked)
SIDES
Breadfruit
Plantain
Black quinoa
Kale
Cook ingredients on a low heat for approx 30 minutes.
