Viral Baked Feta Pasta serves 2-4 (original by @feelgoodfooodie)
1 pint Cherry Tomatoes
2 Bell Peppers, chopped
1 Zucchini, chopped
Olive oil
Salt & Pepper
Dried Basil Spice / or Italian seasoning
1/2 tsp minced Garlic
8 oz Block of feta
1/2 Box Rigatoni (1/2 lb)
Reserved pasta water
Fresh basil (optional for topping)
Wash, cut and prepare vegetables. Preheat oven to 400.
In a baking dish (9x13), add tomatoes, peppers and zucchini. Drizzle generously with olive oil and season to taste with salt, pepper and dried basil or Italian seasoning.
Add fresh block of feta directly in the middle of the vegetables. Make sure it’s flush with the dish. Add a drizzle more olive oil and seasoning on top of the feta. Spread the garlic on top of the feta.
Bake on 400 for 35 minutes. Vegetables should be fully cooked and sizzling. You can leave in for another 5 minutes if needed.
In this time, cook pasta of your choice. Make sure to keep some pasta water.
When vegetables are cooked, remove from the oven and immediately press down on the feta and mix everything together. Add pasta and a splash of pasta water. Mix well until the creamy feta, vegetables and pasta are all throughly mixed together.
Serve with fresh basil or more dried basil and enjoy!
