Protein-Packed Chickpea Salad
Ingredients:
1-2 cucumbers, chopped
1-2 tomatoes, chopped
6-7 olives, sliced
1 can of chickpeas
Feta cheese, crumbled
pomegranate seeds
Lettuce (optional)
Salt, to taste
Paprika
Fresh or dried mint and parsley
Olive oil
2-3 tbsp lemon juice
Instructions:
For Roasted Chickpeas:
Rinse and drain the chickpeas (1 can or about 1 cup cooked).
Toss with olive oil, salt, paprika, or any preferred seasonings (like cumin, garlic powder, or herbs).
Spread on a baking sheet in a single layer.
Roast in a preheated oven at 200°C (400°F) for 20-30 minutes, stirring halfway for even crispness.
Allow to cool slightly for the best crunch before adding to the salad
Chop all the vegetables and place them in a bowl.
Add olive oil, salt, herbs, and lemon juice; toss to combine.
Gently mix in the feta cheese.
Finally, add the roasted chickpeas and sprinkle with pomegranate seeds.
Serve and enjoy your delicious salad!
