Husband and wife team Ori Menashe and Genevieve Gergis didn’t set out to open a Middle Eastern restaurant to mimic what you would find in the Middle East. They opened Bavel to showcase the flavors of their backgrounds that they grew up loving. Chef Ori spent months developing the spice blend for his roasted lamb neck shawarma and cooked pounds and pounds of garbanzo beans to perfect his hummus while Genevieve played with licorice root to create a delicious ice cream bonbon covered in caramelized white chocolate.
