Ingredients:
½ cup arils from 1 large pomegranate
1 (6oz.) pkg. rice pilaf mix
½ cup green onions
¼ cup pine nuts, toasted
2 tbsp. shredded Parmesan cheese
Preparation Directions:
~ Score pomegranate and place in a bowl of water. Break open underwater to free arils. The arils will sink to the bottom of the bowl and the membrane will float to the top. Drain off water and reserve ½ cup of the arils, save the rest for another use. They can be refrigerated or frozen.
~ In a medium saucepan, prepare rice pilaf according to pkg. instructions. Stir in pomegranate arils, green onions, pine nuts, and cheese during the last 5 minutes of cooking.
