Sambal Ulek (or Oelek) made the real way, with a Cobek dan Ulekan.
Or Mortar and pestle.
Contrary to popular misbelief, oelek/ulek doesn't mean the mortar and pestle.
Ulek means to grind, hence sambal ulek. Like pesto comes from the word pestare, same meaning.

All you need:
Red chillies
Salt
Vinegar or Lime juice
That's it.
Use it as a cooking ingredient when the recipe calls for chillies or chilli paste. It keeps in the fridge a week, easily, given the salt and vinegar.
