Back in the late 20th century when Keralites migrated to the urban spaces of India and set up a lot of bakeries, they took the cities by storm with their secret weapon, the egg puffs.
The eggs puffs are an emotional element to most of us Malayalee's and brings crispy and soft memories about our school days. Perhaps was lunch on some days too.
Ingredients:
Puff pastry:
250 gm - Plain flour (maida)
250 gm - Unsalted butter
125 ml - Water
1/2 - Lemon juice
1 pinch - Salt
Egg masala:
6 nos - Eggs (12 portion)
2 Tablespoons - Oil
5 Cloves - Garlic
Small piece of ginger
2 nos - Green chilli
1 spring - Curry leaves
1 Medium - Tomato
4 Medium - Onion
Salt - to taste
1/4 Teaspoon - Turmeric powder
1/4 Teaspoon - Black pepper powder
1/4 Teaspoon - Garam masala
1/2 Tablespoon - Coriander powder
1/2 Tablespoon - Kashmiri chilli powder
1/2 Cup - water
1 Egg for egg wash
