Hi everyone, I’ve been so busy with work I haven’t made many videos lately. But I’m going to try and do some for you.
The sound is a bit muffled, I think my phone is on the way out, so apologies for that. But I have a new phone due any day.
This recipe is stuffed aubergines with a mince meat sauce and bechamel sauce.
It really is delicious. I hope you like it.

Serves 4
Ingredients:
2 aubergines cut in half and seasoned with salt, pepper and olive oil
Meat sauce:
1 onion
1 clove of garlic
400g mince meat
400g tin tomatoes
1 tsp tomato purée
1 tsp oregano
1 tsp cinnamon
2 bay leaves
Salt & pepper
Chicken stock cube
Parsley
Bechamel:
5 tbsp butter
5-6 tbsp flour
300ml milk, maybe a bit more
100g grated halloumi
1 egg
