If you’re wanting to make a meal that’s quick, easy, light, flavorful and delicious then my lemon garlic-butter pasta with salmon is sure to please. Try it for tonight’s dinner. Here’s the recipe.
Lemon Garlic-Butter Pasta With Salmon
. 1/2 box of a 16 oz box of linguine pasta
. 2 salmon fillets
. 1/2 c fresh grated parmesan cheese
. 1/8 c white cooking wine
. 5 tbls butter
. 3 tbls oil
. 3 tbls fresh parsley, chopped
. 1 tbls fresh lemon juice
. 1 tsp crushed red pepper
. 3 cloves of garlic, minced
. Zest of 1 lemon
. Salt and pepper
- [ ] Preheat oven to 350 degrees.
- [ ] Cook pasta according to box instructions.
- [ ] Season salmon with salt and pepper.
- [ ] In a medium sized skillet, on med/high heat, add 1 tbls of oil and 1 tbls of butter.
- [ ] Add salmon to skillet and allow to brown for 1-2 minutes.
- [ ] Flip salmon and transfer skillet to oven for 8-10 minutes.
- [ ] In a medium sized pan, on medium heat, add remaining 2 tbls of oil and 4 tbls of butter.
- [ ] Add garlic, crushed red pepper, lemon zest, lemon juice and cooking wine.
- [ ] Stir and cook for 1-2 minutes.
- [ ] Drain pasta and add to sauce.
- [ ] Mix together until well incorporated.
- [ ] Add parmesan cheese and parsley.
- [ ] Mix again until well combined.
- [ ] Plate pasta and top with salmon.
