THE GROWN UP CHOCOLATE COOKIE
These rich, extra dark chocolate sandwich cookies are soft and fudgy. They are definitely a cookie for chocolate lovers.
Bonus: They stay fresh for 5 days or more in an airtight container. (We keep it in the fridge.)

Cookie Ingredients
•2 cups all-purpose flour
•1/2 cup dark cocoa powder
•1 teaspoon vanilla
•1/2 teaspoon salt
•1 cup room temperature salted butter
•1 cup powdered sugar
•2 egg yolks
Ganache Ingredients
• 3.5 oz dark chocolate- very finely chopped
• 3 oz steaming hot heavy cream
Instructions
Beat the butter and sugar for 2 minutes or until it's light in color and fluffy.
Add the egg yolks, vanilla and salt and beat another 2 minutes.
Sift and stir in the cocoa and flour. Then use the electric mixer briefly on medium speed until a smooth dough forms.
Form the dough into disks and wrap in plastic. Chill at least an hour.
Preheat oven to 325 degrees F.
Roll cookies dough to 1/4 inch or thinner. We prefer slightly thinner.
Cut to desired size- we used a 2 inch circle cutter.
Bake 9-11 minutes or until cookies have puffed slightly and no longer look shiny.
Cool completely.
Fill with your favorite buttercream, caramel or homemade ganache.
