Recipe in English:
Ingredients:
-Falak Extreme Basmati Rice 500g
-Water as required

-Namak (Salt) 1 & ½ tbs or to taste
-Badiyan ka phool (Star anise) 1
-Tez patta (Bay leaves) 2
-Laung (Cloves) 3-4
-Lemon juice 1 tbs
-Cooking oil 1 tbs
-Hari mirch (Green chilli) paste 2 tbs
-Lehsan paste (Garlic paste) 1 & ½ tbs
-Namak (Salt) 1 tsp or to taste
-Lemon juice 2 tbs
-Chicken mix boti 1 kg (large pieces)
-Cooking oil for frying
-Dahi (Yogurt) hung ½ Cup
-Cheddar cheese grated 3-4 tbs
-Hari mirch (Green chilli) paste 2 tbs
-Cream 3 tbs
-Kali mirch (Black pepper) crushed 1 tsp
-Chaat masala ½ tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Kala namak (Black salt) ½ tsp
-Javitri powder (Mace powder) ¼ tsp
-Elacihi powder (Cardamom powder) ¼ tsp
-Kasuri methi (Dried fenugreek leaves) 1 tbs
-Cornflour 1 & ½ tbs
-Namak (Salt) ½ tsp or to taste
-Water as required
-Adrak (Ginger) slices 4-5
-Hari mirch (Green chillies) 5-6
-Chaat masala 1 tsp
-Cooking oil 1-2 tbs
-Lehsan (Garlic) sliced 4-5 cloves

-Cooking oil ½ Cup
-Badi elaichi (Black cardamom) 1
-Sabut kali mirch (Black peppercorns) 12-15
-Hari elaichi (Green cardamom) 2-3
-Darchini (Cinnamon sticks) 2
-Zeera (Cumin seeds) 1 tbs
-Sabut lal mirch (Button red chillies) 5-6
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Dhania powder (Coriander powder) 1 tbs
-Namak (Salt) ½ tbs or to taste
-White biryani masala 1-2 tbs
-Badam powder (Almond powder) 1 tbs
-Water ½ Cup
-Lemon juice 3 tbs
-Dahi (Yogurt) 1 Cup
-Cream ¼ Cup
-Kewra essence ½ tbs
-Podina (Mint leaves) chopped
-Hara dhania (Fresh coriander) chopped

Directions:
-In a bowl,add basmati rice,water,wash thoroughly and soak for 30 minutes then strain soaked rice & set aside.
-In a pot,add water & bring it to boil.
-Add salt,star anise,bay leaves,cloves,lemon juice,cooking oil & mix well.
-Add soaked rice,mix well & boil until 3/4th done then strain & set aside.
-In a bowl,add green chilli paste,garlic paste,salt,lemon juice & mix well.
-Add chicken & mix well,cover & marinate for 30 minutes.
-In a wok,heat cooking oil,add marinated chicken and fry on medium flame until light golden (6-8 minutes) then take out & set aside.
-In a bowl,add yogurt,cheddar cheese,green chilli paste,cream,black pepper crushed,chaat masala, white pepper powder,black salt,mace powder,cardamom powder,dried fenugreek leaves,cornflour, salt & mix well.
-Now add chicken pieces,mix and coat well.
-In a wok,add water and bring it to boil.
-Place steamer and lined with butter paper.
-Place coated chicken pieces and apply remaining marinade.
-Add ginger,garlic,green chillies,chaat masala,fold butter paper,cover and steam cook on low flame for 40 minutes.
-In a frying pan,add cooking oil,garlic,ginger,green chillies and fry on medium flame for a minute.
-Add onion,mix well & fry until onions are light brown.
-Let it cool.
-Transfer to a chopper,add fresh coriander,mint leaves,chop well & set aside.
-In a pot,add cooking oil,black cardamom,black peppercorns,green cardamom,cinnamon sticks, cumin seeds,button red chillies and mix well.
-Add onion & chilli mixture,mix well and cook for 2-3 minutes.
-Add white pepper powder,black pepper powder,coriander powder,salt,white biryani masala, almond powder,mix well and cook for a minute.
-Add water and mix well.
-Add lemon juice and mix well.
-Add yogurt,mix well and cook on medium flame for 6-8 minutes.
-Add cream,kewra essence,mix well and cook for a minute.
-Take out half quantity of gravy in a bowl and reserve for layering.
-In remaining gravy,add mint leaves,fresh coriander,fried onion,layer half quantity of boiled rice, reserved gravy,mint leaves,fresh coriander,fried onion,remaining rice,fried onion,steam cooked chicken with gravy,fresh coriander,cover and steam cook on low flame for 15-18 minutes.
-Garnish with fresh coriander,serve with salad and raita!
