Chicken teriyaki + crispy garlic fried rice ~ using Funtable teriyaki soy sauce.
Here are my tips to make the most delicious chicken teriyaki bowl with garlic fried rice:
- fresh rice is fine to use, just cook with less water so it’s more dry and better for frying
- use LOTS of garlic (I’m using an entire bulb)
- chicken thighs are best for extra juicy chicken
- thoroughly dry the chicken to ensure a crispy sear
- add chicken skin-side down to a cold pan, then cook on medium-high heat until it’s golden brown and crispy
- no need to cook entirely because it’s going to cook again later
- in the same pan add a generous amount of oil and cook the garlic til light brown and save some for garnish
- add the rice then season with soy sauce, oyster sauce and salt to taste
- in the same pan cook your veggies with a splash of broth and cover until cooked through
- heat funtable teriyaki sauce in a pan until it bubbles and add back the chicken, then let it cook until slightly thickened
