Do not throw the seed layers of ash gourd or Madras cucumber ( sambar sauthe). You can make a delicious soft dosa with ash gourd or madras cucumber flavour. It's a super tasty dosa. Grind the dosa batter in the evening.
You can use Madras cucumber deseeded seed layers instead of ash gourd seed layers. If you want to make a sweet dosa then add 3 to 4 tbsp of scraped jaagery while grinding and add salt 1/2 tsp instead of 1/2 tbsp. Dosa making method is the same. You can use 1/4 cup butter milk, but don't add water while grinding.
Do not flip it to fry the other side and also don't make a thin dosa. This type of dosa will be fried on one side only to retain the softness and fluffiness.
