Potato wedges marinated with olive oil and herbs coated with parmesan cheese powder and baked.
ITALIAN PARMESAN ROASTED POTATOES
Ingredients
Parmesan cheese powder for sprinkling
4 medium non-starchy potatoes
1-2 tablespoons olive oil + for greasing
Sea salt to taste
1 teaspoon red chilli flakes
1 tablespoon chopped garlic
Method
1. Preheat oven at 180ºC. Grease a baking tray with some olive oil.
2. Heat some water in a non-stick pan and bring to boil.
3. Cut the potatoes into wedges.
4. Add salt and potato wedges to boiling water and cook for 4-5 minutes. Strain them into a bowl. Place the potatoes under running water.
5. Pat dry the potato wedges using an absorbent paper. Transfer them into a bowl. Add sea salt, chilli flakes and garlic and mix. Add olive oil and mix well.
6. Transfer the potato mixture onto a baking tray. Sprinkle some parmesan cheese powder on top, place the baking tray in preheated oven and bake for 15-20 minutes.
7. Serve hot.

Cooking Time: 20-25 minutes
