Resep Lomie Kangkung (untuk 6-8 porsi)
Bahan bumbu halus:
6 siung bawang putih
6 siung bawang merah
50 gr udang
Bahan topping ayam:
500 gr ayam paha atas / 250 gr filet
3 sdm minyak
2 batang daun bawang cung
2 liter air
1 ½ sdm kaldu ayam bubuk
1 sdm garam
1 ½ sdm gula pasir
¼ sdt merica
3 buah jamur shitake (opsional)
Bahan lainnya:
½ sdt garam
1 sdt minyak wijen
Bahan kuah kental:
3 sdm kecap manis
1 sdm kecap asin
1 sdm saus tiram
80 gr tapioka
1 butir telur
Bahan rebusan:
1 ½ liter air
½ sdt baking soda
½ sdt garam
Bahan pelengkap:
mi basah
kangkung
taoge
bawang goreng
sambal rawit
jeruk limau
Cara membuat :
1. Masukkan bawang putih, bawang merah dan udang ke dalam food processor, haluskan
2. Panaskan minyak, tumis bumbu halus hingga wangi. Iris daun bawang kemudian masukkan ke dalam wajan, tumis hingga wangi dan sedikit kecokelatan
3. Masukkan air, kaldu ayam bubuk, garam, gula pasir dan merica, masak hingga mendidih lalu masukkan ayam dan jamur shitake yang sudah di iris, masak selama 20 menit di api kecil
4. Sisihkan ayam lalu tambahkan garam dan minyak wijen, aduk rata dan tutup
5. Masukkan kecap manis, kecap asin dan saus tiram ke dalam wajan, aduk rata
6. Larutkan tapioka dengan sedikit air kemudian masukkan perlahan ke dalam wajan, masak hingga mengental
7. Kocok telur kemudian masukkan ke dalam wajan secara perlahan sambil di aduk
8. Lepaskan daging ayam dari tulang nya kemudian potong-potong
9. Didihkan air masukkan garam dan baking soda, rebus taoge dan kangkung beberapa saat, tiriskan
10. Rebus mi beberapa saat, tiriskan
11. Lomie ayam kangkung siap disajikan

Lomie Kangkung Recipe (yield 6-8 servings)
Spice Paste ingredients:
6 clove garlic
6 pc shallot
50 g shrimp
Chicken Topping ingredients:
500 g chicken thigh / 250 g fillet
3 tbsp oil
2 pc scallion
2 liter water
1.5 tbsp chicken powder
1 tbsp salt
1.5 tbsp sugar
¼ tsp pepper
3 pc Shiitake mushroom (optional)
Other ingredients:
½ tsp salt
1 tsp sesame oil
Thick Soup ingredients:
3 tbsp sweet soy sauce
1 tbsp soy sauce
1 tbsp oyster sauce
80 g tapioca flour
1 pc egg
Ingredients to boil:
1.5 liter water
½ tsp baking soda
½ tsp salt
Add-ons:
Fresh noodles
Kangkung
Bean sprouts
Fried shallots
Chili sauce
Kaffir lime
Steps:
1. Add garlic, shallots, and shrimp into a food processor. Blend until smooth.
2. Heat oil. Sauté the spice paste until fragrant. Slice scallions, then add to the pan. Sauté until fragrant and slightly browned.
3. Add water, chicken powder, salt, sugar, and pepper. Bring to a boil, then add chicken and sliced shiitake mushrooms. Cook for 20 minutes over low heat.
4. Set aside the chicken, then add salt and sesame oil. Mix well and cover.
5. Add sweet soy sauce, soy sauce, and oyster sauce to the pan. Mix well.
6. Dissolve tapioca in a little water, then slowly add to the pan. Cook until thickened.
7. Beat the egg, then slowly add to the pan while stirring.
8. Remove the chicken meat from the bone then chop into pieces.
9. Boil water. Add salt and baking soda, then blanch the bean sprouts and kangkung briefly. Drain.
10. Boil the noodles briefly and drain.
11. Lomie Kangkung is ready to serve.
