Tuty Fruitty cake is a typical Indian Fruit cake made with Tutty fruitties (Candied Fruits) It is basically Vanilla flavored sponge cake to which candied fruits are added. It is usually baked in loaf tin and makes for perfect snack that can be enjoyed anytime of the day.
FRUIT CAKE
Ingredients
Refined Oil- 3/4 Cup (175 ml)
Milk- 1/2 cup (120 ml)
Curd- 1/2 Cup (25 ml)
Powdered Sugar- 3/4th Cup (85 gm)
Vanilla essence- 3/4th tsp
Refined Flour (Maida)- 1 & 1/2 cup (190 gm)
Baking powder- 1 tsp
Baking soda- 1/2 tsp
Vanilla Custard powder- 2 tsp (Substitute -Corn flour)
Salt- 1/4th tsp
Tuty Fruity- 1/4th Cup
Additional milk to adjust consistency- 2 to 3 Tbsp
Process
In a mixing bowl, add oil, milk & Curd. Mix well Add Powdered sugar, vanilla essence and mix well.
Add flour, baking powder, baking soda, custard powder and salt. fold it gently.
Grease the Mould with oil and place butter paper. Pour the batter into the Mould and bake it at 180 for 40 minutes. Let cool a bit. Cut and serve.
