Full recipe for COLD YOGURT SOUP
Ingredients:
1 cup wheat
1 kg yogurt
4-5 (~400 g) small beets
1-1.5 L water (for boiling the beets) *
1 tbsp salt
2-3 tbsp cold-pressed olive oil
(*) Beets should be submerged such that there are 2 cm (minimum) of water above them
Directions:
PREPARING THE WHEAT
Measure 1 cup of wheat grains, wash and drain them
Boil 5 cups (~1 L) of water in a pot
Add the wheat into the boiling water and cook for 35-40 minutes on low heat
Make sure the grains become very soft!
Let it cool down to room temperature. Then, chill the cooked wheat in the fridge for 3-4 hours, or overnight
PREPARING THE BEETS
Thoroughly wash the beet roots
Place them into a pot and submerge the beets until there is 2-3 cm of water over them. To preserve their bright colour, do not skin the beets before cooking them.
Set the stove at medium-high heat to boil the beets.
Then, cook them on a medium-low setting for 45-60 minutes, until the beets soften.
If the knife can easily get into and out of the beets, this means, they are cooked well
Let the cooked beets cool down to room temperature
Peel their skin and dice them
Add 1 tsp of salt and 2-3 tbsp of cold-pressed olive oil
Mix well and keep them in the fridge until serving
PREPARING THE TOGURT
Whisk together 1 tsp of salt and 1 kg of yogurt until the mixture becomes smooth and lump-free
ASSEMBLING THE SOUP
Once all the ingredients are chilled, assemble the wheat and yogurt mixtures together
Stir until you achieve a homogenous mixture
Chill the yogurt soup until serving
SERVING
Serve the COLD YOGURT SOUP chilled on hot summer days
On the serving plate, add 1 tbsp of diced beets and mix them with the yogurt soup
Beets give this soup a batik-like appearance, waves of pink entwining with the white yogurt
You can add more diced beets to develop brighter colour, texture, and the sweet earthy taste of beets on your plate
