Goli Baje is a mangalore style bajji or bonda. It’s a crispy #eveningsnack made using maida and curd. Enjoy this rainy evening with a hot cup of tea and some crispy #GoliBaje. Do try it out and share your feedback with us!
Goli Baje Recipe:
Ingredients :
Maida - 1 ½ Cups
Curd - ¾ Cup
Water - ½ Cup
Asafoetida / Hing - A Pinch
Ginger (finely chopped) - 1 tsp
Green Chilli (finely chopped) - 1 tbsp
Curry Leaves (finely chopped) - 2 tbsp
Black Peppercorn - ½ tsp
Cumin Seeds - ¼ tsp
Baking Soda - ¼ tsp
Salt - ½ tsp
Oil (for deep-frying) - As Needed
Instructions:
1. To a large bowl, add the Maida. Add curd and ½ cup of water and mix until there are no lumps.
2. Add the hing, ginger, green chilli, curry leaves, black peppercorn and cumin seeds. Beat for 4-5 minutes using your hands to make the batter fluffy and slightly stretchy.
3. Mix well, and rest for 15 minutes at room temperature.
4. Add baking soda and water, and mix to combine.
5. Using wet hands, take small portions (around 1-2 tbsp) of the batter and drop it into hot oil.
6. Deep fry until it turns golden brown and is floating in the oil. Remove from the oil and serve hot with coconut chutney.
Cooking Tips:
1. You can modify the flavorings by changing the ingredients. You can add coconut chunks, and also remove black peppercorn or cumin seeds as per your preference.
2. Deep-fry on medium heat so that it is completely cooked inside, while still golden brown on the outside.
3. Sour curd works best for this recipe.
4. Mix in only one direction while beating the batter.
