This easy and tasty lower carb mashed celeriac recipe is a great change from higher carb traditional mashed potatoes. Is it keto? Celery root (aka celeriac) is not technically keto, but it's got half the carbs as other root vegetables, like potatoes, so walks the line.
Mashed celery root (celeriac) does not have the smooth consistency of mashed potatoes - it's a little chunkier and not as fluffy but still delicious. Plus it's always great to have a lot of variety in our diets.
Garnish this celery mash recipe with sliced green leaves that are growing out of the root stalk or with fresh parsley.

What is Celeriac?
Celeriac is the brown "knobby" root of a variety of celery. Technically celeriac and celery root are the same plant but one is grown specifically for the root and one is grown specifically for the stalks.
Choose a firm bulb with fewer knobs (they contain so much dirt sometimes) and hopefully get one with green stalks. The green stalks indicate how fresh it is by how firm they are. If the stalks are wilted it will be older and more fibrous. It will need to cook longer.
Celeriac (celery root) is lower in carb than potatoes but not as low in carbs as a cauliflower mash. Likewise, it is a root vegetable so not technically all keto but like carrots you can have them but do not want to eat them in large quantities or regularly.
It's hard to peel celery root with a veggie peeler so use a knife if that's easier. It turns brown fast once cut so submerge in water immediately (add a little vinegar or lemon juice if you've got it).

Don't like sour cream? Cool - use broth, heavy whipping cream, milk, or just leave it out.
Vegans use your favorite equivalent non-dairy substitutes for butter and heavy cream.

Yup! Focus on the leaves as a garnish. The stalks may be fairly fibrous but would be a great addition for flavor to stocks. The stalks could also be eaten in soups if chopped small and cooked long enough to become soft.
Serving Suggestion:
I like to serve the Mashed Celeriac with a spicy skirt steak or pan fried chicken, along with a salad and a side vegetable.
Serving size: 4
Ingredients:
-1 large or 2 medium celeriac, peeled & chunked
-1 ½ Tbsp unsalted butter
-⅓ cup sour cream
-½ tsp salt
-parsley or celery root leaves, sliced as garnish
Instructions:
-Fill a medium pot half way with water.
-Slice ½" of both ends of the celery root to make a level surface to slice off the skin.
-Carefully peel or cut off the skin off the celeriac.
-Dice / chunk the root and immediately throw in the pot of water so it doesn't oxidize.
-Add ½ teaspoon salt and bring to a boil.
-Reduce heat and simmer ~ 25 minutes or until tender.
-Strain water and add celeriac back to pot. Add butter, sour cream, and salt and mash it up.
-Add salt to taste and garnish with herbs.
