Recipe
2 cups butter
2 1/2 cups sugar
1 cup tough crackers blended
2 tablespoon baking powder
1 tablespoon cinanamon powder
1 tablespoon mixed spice
2 cups flour
8 eggs
2 cups fruits ( soaked in rum and red label wine)Blending the fruits is optional
1/4 cup orange juice
2 tablespoon vanilla
Enough Browning for desired color usually 3/4 bottle
1 Nutmeg
Mix or cream butter and sugar for 15 minutes then add eggs a little at a time ( you may grater a little lemon/lime zest in the eggs) cut and fold the flour.
Bake for 1 1/2 in thin baking tim and for 2 hrs in big tin baking tin
Place a container of water in the oven to regulate the heat.
Ps.the orange juice should be sweet and not sour
