Artichokes
Ingredients:
-kosher salt
-2 raw artichokes
-4 tablespoons salted butter
-2 cloves garlic, minced
-juice from 1 lemon
-Parmesan cheese, freshly grated
Directions:
-Bring a large pot of water to boil and add in a generous amount of salt. Place in the 2 artichokes to cook, making sure they’re covered by water (or at least mostly covered). Cover the pot and boil the artichokes for 45 minutes-1 hour. You can tell they’re done when you can easily stick a butter knife stuck into the stem area (it should be quite tender). Remove from the water and set aside.
-Place butter in a microwaveable dish and microwave for about 30 seconds, or until melted. Add in the garlic and lemon juice.
-Serve the cooked artichokes with the butter mixture and a side of the grated cheese. Enjoy!
