Picking figs at the right time requires a little bit of patience. It's a fruit that can reward you or scorn you. Picking too early will lead to sap that most are allergic to. Pick too late and your fig can sour with mold or other fermenting agents. Know your fig and when you like it. The fig in this video is called Conadria and I like it well past most people would consider its prime, but because I wait I am rewarded with a very sweet & delicious fig.
Things to note: wait till drooping occurs, skin color changes and the fig softens. Particularly the neck should be soft. Sugar spots are also a great indicator of ripeness and fig sap is certainly an indicator of it being under ripe.
