Pasca is a traditional Romanian Easter Cheesecake, a sweet lemony yeast dough, with smooth cheese and raisins filling.
Ingredients for the dough:
1tsp yeast
1tbsp milk
1tsp sugar
Mix and let it rest for 5 minutes, or until fluffy. Then add to this:
½cup milk
⅓cup sugar
1 egg yolk
½ lemon zest
2 cups flour.
Mix on low speed for a couple of minutes, until it forms a ball, then add
25g soft butter and mix again for 5 minutes.
Transfer the dough to a greased bowl, cover and let it rest for about 1 hour.
Ingredients for the filling:
250g ricotta cheese
1 egg
¼cup raisins
2 tbsp sugar
2tbsp semolina
1tsp vanilla paste
½ lemon zest
+1 egg yolk for brushing.
When the dough is ready, take ⅓ out (you’ll use this to make a plait), roll the rest of the dough and place it over your oven dish, then add the cheese filling. Divide that ⅓ of the dough into 2 equal parts and form 2 long sausages. Then, you'll roll them together, as shown in the video. It will look like a plait. Add this all around the oven dish, brush with egg yolk and bake it in the preheated oven at 175C for about 30-35, or until golden brown. That's it! Enjoy!
