California rolls are made by rolling sushi rice on the outside of the seaweed.
I chose to make three types:
- Japanese omelette Tamagoyaki with fried shallot,
- avocado with fish eggs,
- the dragon sushi made with salmon and avocado.

👩🍳 Ingredients for 30 sushis rolls
Rice:
300g short grain rice
35cl water
2 tbsp white rice vinegar
15g sugar
5g salt
Fillings:
1 shallot
3 tbsp vegetable oil
120g salmon
40g trout eggs
2 avocados
Zest of a lime
5g dill
3 Nori seaweed sheets
Homemade mayonnaise
Japanese omelette Tamagoyaki:
3 eggs
1 tsp dashi powder
1 tsp sugar
1 tsp soy sauce
1 tbsp mirin
Vegetable oil
Ustensil:
1 sushi mat
