If you were to ask my favorite street food, i.e. an eat-it-with-your-hands delight that encapsulates the fresh abandon of a Door County summer, it would definitely be (fast drumroll)...the Swedish Shrimp Roll! A hard roll-delivered mix of fresh medium-size shrimp with mayonnaise, chopped dill and lemon juice, the exotically-named Räksmörgås, or Shrimp Roll, is perfect for a summer's day, even when it's so darn hot that you don't really feel like eating.
