Maple glazed chicken on top of maple carrots and a side dish of home grown canned sweet corn.
Recipe:
1 pound 8 ounce package refrigerated mashed sweet potatoes. Or fresh sweet potatoes, Or some you have canned.
NOTE: I used one of my canned Maple Carrots, quart, instead of sweet potatoes
1 pound of chicken breast
Steak seasoning mix of your choice
2 tbsp butter
1/4 cup Maple Syrup
1/2 cup sliced green onions
Step 1
Prepare the sweet potatoes in the micro wave according to the package. If using fresh, cook your sweet potato in the micro wave until soft. For me, instead of sweet potatoes, I opened up my canned Maple Carrots and put it in a small pot to warm up.
Step 2
Meanwhile, heat butter in a large skillet on med heat, Slice chicken into strips and then coat them with the steak seasoning. Add chicken to skillet, cook until no longer pink (170 degrees) Then add maple syrup and cook for 2 minutes. Stir in onion greens.
Step3
Mash your sweet potatoes or carrots. Dish them on plates, add chicken strips on top, drizzle with maple syrup.
