Ingredients
2 tbsp unsalted butter
½ cup spinach, chopped
½ cup mushrooms, sliced
¼ cup green onions, finely chopped
2 eggs
1 tbsp milk
salt and pepper, to taste
¼ cup gruyere or emmental cheese, shredded
To serve:
1¾ oz tomatoes, halved
8 oz hash browns
