Hey everyone, today (February 8th) is National Potato Lover's Day, so I'll be making some gnocchi; potato gnocchi to be exact. Gnocci describes the pasta/ dumpling itself, and many different ingredients can be used to make it.

Ingredients-
Gnocchi-
2 lbs russet potatoes, peeled and mashed
2 cups all purpose flour
1 egg
1 tsp kosher salt
Basil pesto-
2 cups basil leaves
4 cloves garlic
⅓ cup grated parmesan
⅓ pumpkin seeds (or pine nuts)
⅓ extra virgin olive oil
2 tsp lemon juice
½ tsp kosher salt
½ tsp black pepper
Sauteed Vegetables-
Cherry tomatoes
Yellow onion
Orange bell peppers
Zucchini
Butter
Garnish-
Basil
Grated parmesan
