ingredients for the fillings
300 grms ground beef
2medium onion chopped
2tablespoon oil to cook or butter
salt 1tsp
1 tsp sweet pepper/all spice
1/4 cup snowbers/fine nuts if you don't have it's ok
we begin by preparing and cooking the meat filling..in a frying pan put 2tablespoon of cooking oil or butter add chop onions and saute it for few minutes if it started to get cook add fine nut if you have and addibbeh the ground meat cook it by just stirring it add salt and pepper set aside.
for the baking pan we can use ghee vegetables or non vegetables or butter clarify 1 1/2 table spoon just melt it in low fire make sure you spread it evenly. keep it for a while in freezer so that the butter will get hard an d it is easy for you later on.
for the kibbeh dough we need
1 kilo ground beef
360 grms bulgor fine or 2and 1/2 cup
salt
sweet pepper
ice cold water
1 big onion or 2 medium size
in food processor put the onion ang begin to grind until fine add 100grm of meat from the 1 kilo we have and add 1 tsp of salt and
1tsp of sweet pepper and grind it until very fine and set aside.
in a big bowl put the remaining of the ground meat.
now wash and rinse bulgor thoroughly strain and drain and squeeze to remove excess water ..and add it in the bowl with meat.add 2 tsp of salt and 2 tsp of sweet pepper.add also the meat we bring with onions.now mix it well with your hand until will combine don't forget to add cold water to have smooth texture.
after you mix we put it back in the food processor to grind it again it will become smooth and soft but not watery.
when we finish all in the food processor mix it little and begin to prepare it
take the baking pan from freezer put towel under so that it won't move spread meat mixture at the bottom do it very fine layer smooth the dough add the filling don't put too much just enough to fill try not to out until the edge or in the corner.press or push it little to stick it in the meat.
after add the remaining meat mixture to cover the upside part begin at the side around the pan and the middle will be the last to cover to avoid air the stock inside begin to push it around before you finish to cover push it again to make sure it won't open when we cook...
smooth upside and begin to cut a line don't push hard or cut the bottom part of the meat only from the second layer...cut it into 4and begin to draw a line clockwise to counter clockwise line looks like diamond.
when you're done pass the knife around the
around the baking pan so that it won't stick around when we cook it.make a hole in the middle.
to cook we need cooking oil and olive oil you can add ghee or butter if you want put to cover the meat with oil
cook it for 1hr or little more defend on your oven at 259c
when its done let it cool a little before you remove the oil put it in thick layer of kitchen towel to remove excess oil before you cut..
serve it with salad tomatoes or cabbage salad or with yogurt as you prefer..
