Alu vadi is a snack that is popular in Maharashtra and Gujarat. Alu leaves are stuffed and rolled. These are steamed and then shallow or deep fried to make delicious snack. INGREDIENT:
2 cup besan
lemon size Tamarind
10-11 garlic
2 inch ginger
10-12 green chill
coriander leaves
1tea spoon jeera
half tea spoon turmeric
salt according to taste
oil to fry
one bunches of alu vadi leaves
Method:
Take a mixer jar add a coriander leaves, jeera, green chilli, garlic, ginger ,tamarind. Make it a smooth paste take a mixing bowl an add paste in mixing bowl. Now add a besan ,salt ,turmeric powder,and also add remaining tamarind water,and make a smooth paste. First wash the Aalu leaves then cut the stalks close to leaf as possible.Take the biggest as a base leaf. take the better and spread it evenly over the leaves. spread the batter with hand to spread it evenly every where. you can use as many leaves as you want. fold the base part of the leaf. Do not make to tight roll.Heat up two cup of water to steam the alu leaves. Take a strainer and place a Aalu leaves on it.steam the leaves for 10 minutes.After ten minutes cool down the leaves then cut down the alu leaves.Take a pan heat up the oil to swallow fry the leaves.Fry until it turn it to reddish.After fry take it to a serving plate.
