Rosaria makes 'tacchie', a version of Maltagliati pasta typical of Bellagra, Lazio. It’s an easy pasta to make and you can use any type of mushrooms.
For the dough: 300g 00 flour, 1 egg, between 85 and 100ml water
Condimento: 500g fresh mushrooms, porcini if you have them, garlic clove, salt
