Spicy Chicken Joy
Ingredients
* 4 chicken thighs+4 chicken drumsticks
* 2 cups AP flour
* Oil for frying
Brine
* 4 cups water
* 1/3 cup vinegar
* 2 tbsp salt
* 2 tbsp msg
* 1 tbsp black peppercorns
* 8 cloves smashed garlic
* 3 bay leaves
Seasoned Flour
* 2 cups AP flour
* 1 cup potato starch
* 1 tbsp salt
* 2 tsp msg
* 2 tsp garlic powder
* 2 tsp onion powder
* 1 tsp ginger powder
* 1 tsp five spice
* 1 tsp white pepper
* 3 tsp cayenne powder
Wet
* 2 eggs
* 1 cup sparkling water
* 1 cup dry flour mix
Gravy
* 4 tbsp butter
* 4 tbsp flour
* 2 tsp garlic powder
* 2 tsp onion powder
* 2 cups chicken stock
* 2 tsp soy sauce
* 1/2 tsp msg
Instructions
Fried Chicken
1. Combine brine ingredients until fully incorporated and brine chicken overnight.
2. Whisk together all ingredients for seasoned flour.
3. Mix together all ingredients for wet mix.
4. Dip the brined chicken in plain flour, the wet mix, and the seasoned flour. Make sure to drip some of the wet mix into the seasoned flour to make it extra crispy.
5. Let the chicken sit on a rack for 5 minutes and deep fry at 350°F for 10-12 minutes.
6. Season with a pinch of salt and cayenne.
Gravy
1. Heat butter until foaming then add flour.
2. Cook flour out for a couple of minutes then add garlic and onion powder.
3. Pour in chicken stock and whisk until thick.
4. Season with soy sauce, black pepper, and msg.
