How to make chocolate raspberry pavlova following Nigella Lawson's recipe.
This is one of my 'go to' desserts because it is simple to make and honestly low-effort. The flavors of the dark chocolate and the raspberry work very well together. In the recipe it says to invert/flip the pavlova and my instincts told me not to, but I also wanted to be faithful to the recipe. Inverting the disc instantly made it completely flat and rewatching Nigella's own video she doesn't bother to invert the Pavlova. It's difficult for me to rewatch, but hopefully you all learn to trust your instincts. Please let me know what mistakes you've made in the kitchen in the comments below 👇
6 egg whites
1 1/2 cups (300grams) sugar
3 tablespoons cocoa, sieved
1 teaspoon red wine vinegar
2 ounces dark chocolate, chopped
Preheat your oven to 350°F/180°C
In a large bowl whisk the egg whites until they're stiff, but soft peaks. Gradually add the sugar spoonful by spoonful until the meringue is glossy and you've used all of the sugar. Sieve the cocoa over the meringue, add the vinegar, and the chopped chocolate. Use the whisk to fold into the stiffened egg whites. Pour onto a parchment lined baking sheet and shape however you like.
Put the pavlova into the oven and immediately turn down the heat to 300°F/150°C and bake for 1 hour & 15 minutes. This seizes the pavlova giving it a crunchy exterior and a marshmallow interior. When the baking has finished crack open the oven door and allow the pavlova to cool completely. Do NOT invert the pavlova unless you want to completely flatten the meringue.
For the topping:
2 cups heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla
Raspberries 2 pints/500 grams (washed and dried)
1/2- 1 ounce shaved dark chocolate
Mix in a medium bowl until the cream is whipped and thickened. Spread over the top of the cooled pavlova. Top with 500 grams/2 pints of washed and dried raspberries and shave some more dark chocolate over the top.
