*Cream of "Soup Base"*
4 cups Dry milk
1 1/2 cup Cornstarch
1/2 cup Chicken bouillon
2 tbls dry minced onion
1 tsp pepper
Optional: 1/2 cup dried whatever vegetable you desire, broccoli, celery, potato or mushroom
*No salt because of bouillon
To make- in saucepan mix 1 cup water to 1/3 cup mix. Heat on medium.
Bring to a boil and remove from heat.
*Mix recipe is equivalent to 17-10.5 oz cans
*All Purpose Baking Mix*
6 cups all-purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup shortening or lard
Directions:
Can be done in a food processor. Combine the flour, baking powder and salt. Add the shortening and pulse until the mixture is similar in texture to cornmeal. If you do not have a food processor, mix together the flour, baking powder, and salt into a large bowl. Cut in the shortening with a fork or pastry blender until the mixture is similar in texture to cornmeal. Use in recipes that call for Bisquick or all-purpose baking mix.
*Cornbread Mix (Jiffy)*
4 cups flour 3 cups cornmeal ¼ cup baking powder 1 cup sugar 2 tsp salt
Mix ingredients well in a large bowl. Put 1⅓ cups of mix into six pint-sized jars or quart freezer bags. Store in the freezer until ready to use.
To make cornbread: Empty contents of jar/bag into a bowl. Add 1 egg, ½ cup milk, and 2 Tablespoons melted butter or oil. Spread batter into greased 8x8 inch baking pan or scoop into 6-7 prepared muffin cups. Bake in a 400° oven for 15-20 minutes.
*Equivalent to 6 boxes
Single recipe
½ cup flour
½ cup cornmeal
3 Tbls sugar
1 Tbls baking powder ½ tsp salt
*Country Gravy*
2 cups flour
1 cup dry milk
1/4 cup corn starch
2 tsp salt
1 tbls pepper
2 tsp onion powder
To make- melt 2-3 tbls fat (butter or shortening or oil), add 3 tbls mix, cook off flour, it will become like a paste. Whisk in 1 cup water or milk. Whisk well and heat until thickened. Season to taste. No lumps!
*Brown Gravy*
1 cup flour
1/8 cup cornstarch
1/4 cup beef bouillon
2 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper
Optional-1/2 tsp paprika, 1/2 tsp parsley
Mix well.
To make- melt 2 tbls fat, stir in 2 tbls mix and whisk well and stir in 1 cup water. If desired add browning liquid to darken the color.
*No salt because of salt in bouillon
*Chicken Gravy*
1 cup flour
1/8 cup cornstarch
1/4 cup chicken bouillon
2 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper
Optional-1/2 tsp paprika, 1/2 tsp parsley
Mix well.
To make- melt 2 tbls fat, stir in 2 tbls mix and whisk well and stir in 1 cup water.
*No salt because of salt in bouillon
*Vanilla Cake Mix*
Ingredients
2 ¼ cups all-purpose flour
1 ½ cups granulated sugar
2 ½ teaspoons baking powder
1 Tbls vanilla powder
½ tsp salt
1 cup milk or buttermilk
½ cup oil or butter, softened
1 Tbls *vanilla extract (only if you did not add vanilla powder to dry mix)
3 large eggs or 4 egg whites for white cake
Instructions
Measure flour into quart size jar, add sugar and *vanilla powder on top, then
baking powder, then salt. Place lid on jar. Equivalent to one box mix.
When Ready to Prepare Cake Batter
Preheat oven to 350 and grease pans
Place dry ingredients into stand mixer and stir.
Add milk, oil, *vanilla and eggs and mix on medium-high for one minute.
Pour batter into prepared pans. Bake at 350°F for 8-inch pans bake 20-25
minutes, cupcakes 12-15 minutes, 9x13 for 25-30 minutes. Cool before frosting.
*if you used vanilla powder in the mix, you can skip the vanilla extract
Chocolate Cake: Add 1/4 cup cocoa powder to the flour mixture. Substitute ½ of the milk with strong coffee.
Spice Cake: Add 2 1/2 teaspoon cinnamon, 1/4 teaspoon ground cloves, and 1/2 teaspoon ground allspice to the flour mixture
*Hot Cocoa Mix*
3 cups dry milk
1 1/2 cups Cocoa
2 cup powdered sugar
1/2 cup dry van coffee creamer
Dash salt
Optional-1 1/2 cup chocolate chips (pulsed)
1/3-1/2 cup mix to 1 cup hot milk or water
